In the 1960s, Thierry and Xavier's father, Claude Amirault, a large tuffeau* stone quarry at a candle auction. The vendor was Olivier Gendebien, a famous racing driver who won the Le Mans 24 hour race several times.

Amirault turned the quarry into a cellar for storing wine. There are several hundreds of metres of galleries which can be accessed by tractor, allowing us to age our wines in "demi-muids", (500-litre oak barrels) at a constant temperature of 13 degrees all year round.
